3 Way Bruschetta 🍞🍅🍗🍴

Bruschetta is a lovely appetizer and its absolutely easy to make!
I’m making some tonight for iftaar but 3 different ways. Hope you enjoy! 🙂




1 long french roll sliced in an angle, about 2cm thick or to your preference.
Olive oil to drizzle over
Some garlic cloves to rub on bruschetta

Place sliced pieces of bruschetta on a tray, drizzle over some olive oil and rub garlic on it.
Bake at 180degrees for about 15 minutes or until golden and crisp.

Please note: this is done before adding the toppings to give the bread a crunch.

Creamy chicken Jalapeño Bruschetta topping:
Ingredients- ( should make about 10 to 12)


2 chicken fillet pieces cubed small
Salt and pepper to taste
Half a green chilli finely diced
1 teaspoon crushed garlic
2 tablespoons mayonaise
2 tablespoons fresh cream
1 large jalapeño sliced for garnishing


In a small pot, add some ghee. Cook chicken fillet with all ingredients except the jalapeño for about 5 to 8 minutes or until cooked. Topping should be white and creamy.
Spoon mixture onto bruschetta, Garnish over with sliced jalapeños and bake in the oven for about 5 minutes just before serving.

Chilli Pesto Pepper Bruschetta with feta:


Half a red pepper diced into small cubes
Half a yellow pepper diced into small cubes
Salt and pepper to taste
Small pieces of broken feta cheese
“The Mediterranean Kitchen’s” Red chilli pesto (available at food lovers market and everfresh)


Spread the chilli pesto mix on the base of the bruschetta.
Put one teaspoon each of the yellow/red pepper onto the bruschetta.
Sprinkle over some feta; salt and pepper.
Please note this bruschetta topping recipe doesn’t need to be baked in the oven unless you prefer it.

The Traditional Bruschetta:



15 tiny Rosa tomatoes sliced in halves
Gouda cheese/mozzarella cheese
Half a finely diced red onion
Salt and pepper to taste

Place the tomatoes,  cheese and red onion on the bruschetta and bake for about 5 to 10 minutes until cheese is melted.
