1.5 cups Basmati rice
2 pieces of chicken fillet cubed
1 cup calamari tubes
1 cup shrimp
Handful of green peas and sweetcorn
2 roughly chopped green chillies
2 tablespoons chilli powder
5 tablespoon nandos sauce
1 tablespoon salt
1 teaspoon pepper
2 tablespoons lemon juice
1 teaspoon garlic paste
1 tablespoon crushed chilli flakes
6 tablespoons tomato puree
2 tablespoons oil
Boil your rice for 20 to 30 minutes until cooked with hot water and a pinch of salt.
In a large frying pan add your oil and wait for it to get hot. Add the chicken first and cook for about 2 minutes, then add the shrimp and calamari as well as the corn and peas. Add all of the spices mentioned above EXCEPT for the nandos sauce and tomato puree.
Cook for another 2 to 5 minutes and set aside. Once the rice is cooked, drain it but leave alittle water in the pot. Spoon the rice from the pot into the large frying pan, mixing it with the chicken, shrimp and calamari.
Once all the rice is added then put the frying pan on the heat until it starts to sizzle and add in the nandos sauce as well as the tomato puree.
Mix well and serve hot!
