Pesto Grilled Chicken with Cauli-Mayo Mash β€

Ingredients:

3 pieces of chicken fillet
1 teaspoon garlic
Salt and pepper to taste

For the basil pesto:
1 green Chilli stalk removed
1 cup peanuts
1 and a half cups basil
Half a cup olive oil
1 tablespoon lemon juice
1 clove of garlic
Pinch of salt and pepper

For the Cauliflower mash with mayo:
1 head of cauliflower
Salt and pepper to taste
1 tablespoon ghee
Half a green pepper cubed
4 tablespoons mayonaise

Method:
Marinate the chicken fillet in salt; pepper and garlic paste and fry as you normally would in a pan for 10 minutes or until cooked.

In a blender add all the ingredients under the basil pesto heading and blend until its a fine paste. Set aside in a small bowl once ready.

Break the cauliflower into chunks and add it in a blender;Β  blitz it till it looks like couscous. Take it out and throw it into a fry pan with the ghee, salt, pepper and green peppers. Cook on medium heat for 10minutes without letting it brown or get stuck to the pan, once its ready add in the mayonaise and mix well.

Take the basil pesto and spoon it over the chicken fillet, put the heat on and place the pan on the stove just to let it steam for 2 to 4 minutes.

Once its steamed, place on a plate with a heaping portion of cauli-mayo mash!
