Here’s an easy, light lunch recipe that takes less than 10 mins!
Half a packed Egg noodles
7 to 8 prawns deveined
2 tablespoons butter
1 teaspoon garlic
3 tablespoons Sweet Chilli sauce
1 tablespoon chilli powder
1 teaspoon lemon juice
Half a teaspoon salt
Half a teaspoon pepper
Handful of green peppers and sweetcorn
Handful of Cashew nuts chopped
Some coriander or shallots to garnish
In a pot, boil the egg noodles as instructed on the box. I usually boil mines for about 10 to 15 minutes.
In a separate pot add the butter, wait for it to melt and then add prawns, garlic, chilli, all the spices and lemon juice. Leave it to cook for a few minutes and then add the sweet chilli sauce.
Finally throw in the veggies and cook for 2 more minutes.
Drain the noodles and drop the prawns and veggies over. Sprinkle cashew nuts and coriander over.
