Lemon Cupcakes with a whipped cream and lemon curd frosting. 🍋

Hey hey fellow readers!:)
Here’s a quick, yummy cupcake recipe. Took me less than an hour and almost no work haha! If you really want something unique and tasteful this is a recipe to try. It’s really different from the usual vanilla or chocolate cupcake.



1 Box Betty Crocker Lemon Cake mix
1 bottle fresh cream
1 cup icing sugar
3 tablespoons lemon curd
1 tablespoon lemon zest grated

I’d be lying if I told you I had the time during exams to make cakes from scratch. Its easier when im not studying, however for this recipe I found it better to use Betty Crocker, and you will never be disappointed by the consistency of that cake sponge!

Follow the baking directions on the cake mix box. Bake the cupcakes for around 15 to 20 minutes maximum if you want a soft sponge.

Let the cupcakes cook and start making the frosting. Beat your fresh cream until soft peaks occur and the liquid has changed into a thicker consistency.


Then mix in the icing sugar and lemon curd with a spoon or spatula. Once thats done, ice the cupcakes using an icing bag and sprinkle over some lemon zest.
