Here’s an easy veggie dish if you really can’t deal with carbs and need a less fat filled replacement!
3 cups of butternut chopped into chunks or large cubes
2 tablespoons of butter
1 tsp salt
Half tsp black pepper
Put a pot of water on the stove to boil on high, throw in chopped butternut and let it boil for about 20 minutes or until its soft.
Drain the water, use a smasher or fork to make it smooth, add in the butter, salt and pepper and mix well.
Serve on the side of steak, chicken, seafood in replacement of potatoes.
