Here’s a recipe for the ultimate comfort food 😍
1 piece of chicken fillet cut into small cubes
2 medium sized potatoes
4tbls sour cream
1 chilli chopped finely
1tbls chilli powder
3/4 tsp salt
Half tsp pepper
Any peri peri sauce of your choice
Half cup grated gouda cheese
Take the 2 medium sized potatoes and poke a few holes in it, place it on a tray and drizzle olive oil ontop, sprinkle with some salt and place in the oven to bake for 45 to 60 minutes on 180°C or till its soft inside.
While the potatoes are baking, take a medium fry pan and put some ghee or oil and place the chicken cubes in. Add salt, pepper, garlic, chilli powder and half the amount of chopped chillies. Cook chicken for about 5 to 10 minutes more and then add your peri peri sauce and leave aside.
Once your potatoes are done make a slit in the middle, spread open and place some butter inside, this helps to keep potatoes fluffy and moist. Take the chicken and stuff it into the potato and the sprinkle cheese, sour cream, pepper and remaining chillies ontop.
You can place it back into the oven for a minute or two for the cheese to melt.
