I’m so obsessed with the Oreo Cookie and milk classic that I decided, what better way to indulge in this than to incorporate it into a cupcake?
This cupcake literally has Oreos incorporated into everything! From the icing, to little chunks in the cupcake batter, you even get a cute little surprise when you bite into it and find a whole oreo cookie at the bottom!
If you’re crazy in love with Oreos, Cake and lots of sugar then this recipe is made just for you.
1 package Oreo Cookies, regular size
1 package Mini Oreo Cookies, for decoration (optional)
1 package chocolate cake mix (I use betty crocker)
8 ounces cream cheese, room temperature
1/2 cup butter (1 stick), room temperature
3 3/4 cups icing sugar
1 teaspoon vanilla extract
Preheat oven to 190 degrees. Mix packaged cake mix according to directions.
Line cupcake tins in the baking tray and use a non stick spray, place a regular size Oreo cookie in the bottom of each liner.
Take 1/2 of remaining cookies and chop coarsely and add to cake mix. Fill the cupcake tins. Bake for 15 to 20 minutes (or according to box directions). While cupcakes are baking make the frosting.
Cream together butter and cream cheese. Add vanilla essence, then add icing sugar slowly until blended well. Chop remaining regular-sized Oreos very fine (I put the cookies in the food processor instead of trying to chop them up and it worked fine). Add to frosting. After cupcakes have cooled frost and decorate with Mini Oreos.
